Double Ginger Cookies- Diabetic Friendly

¾ cup brown sugar
¼ cup butter, softened
1 egg
¼ cup molasses
1 ¾ cup plain flour (I used Gluten Free flour)
1tsp baking soda
½ tsp cinnamon
½ tsp ginger,
½ tsp mixed spice
½ tsp nutmeg
¼ tsp salt
Orange marmalade, I used a teaspoon for each cookie
Ginger chopped glace ginger, enough to sprinkle on top of cookies



Preheat oven to 170°c. In a bowl place butter, sugar and molasses. Beat with electric mixer until soft and creamy. Add egg and mix in- do not over beat. Sift in flour, spices and soda. Mix in with spoon. Cover and place in the fridge for 5-10 minutes to harden slightly. In the mean time chop the ginger.

Using a tablespoon measure out mixture and roll into balls. Using two fingers make a dint in the middle. Fill the dint with orange marmalade and sprinkle chopped ginger on top. Bake for 10 minutes.

Makes 24 cookies.
